Okay…I know this is a book blog and all, but I knew I wasn’t going to have a book review to post and I couldn’t think of anything else to talk about today. So…how about a recipe?! Over the weekend I tried out a new recipe for “Healthy Cookies”. Yes, I know, cookies cannot really be healthy, but they can be better then they are. The simple switch? Avocado.
That’s right. Substitute half of the butter needed in the recipe for Avocado and you will have a 40% reduction in the fat content. This works for any recipe, but here is the recipe I used this weekend. I got this idea and recipe from Danielle over at Dig In! Thanks Danielle!
Chocolate Chocolate Chip Cookies
1 ¼ c. butter (approx ¾ c. avocado (1 lg. avocado) and ½ c. butter)
2 c. sugar
2 eggs
1 tsp. Vanilla
2 c. flour
¾ c. cocoa powder
1 tsp baking soda
½ tsp salt
2 c. chocolate chips
Cream together first four ingredients and gradually add in the second four ingredients. Mix in the chocolate chips. Bake at 350 for 8-9 minutes. Do not leave in longer than 9 minutes or they'll get rock hard after cooling. Let sit on a baking sheet for a couple of minutes before transferring to the cooling rack.
This is a pretty simple and easy recipe. I got quite a few cookies out of it, and the best part? I brought them to work and not a single person could taste the avocado. My new favorite cookie! I hope you enjoy. Just remember...with a normal chocolate chip cookie you may have a slightly green hue to deal with due to the avocado.
